Our roaster has studied the ideal ratio of sweetness to acidity. With an extensive knowledge of the profiling process, he knows exactly how to develop the natural flavor of the bean without masking its delicate undertones. He roasts to draw out acidity, citrus, chocolate, molasses, body, sweetness, and floral notes without degradation. He cups his daily roasts and tests them to see if the flavor is developed to it’s highest potential.
